SWEET POTATO BROWNIES (vegan & gluten free)

This is one of my favourite recipes because sweet potato brownies were the first healthy treat I attempted to master. It has taken me hundreds of trials with different flours, sweeteners and quantities to get to something I am really happy with. They have been sampled over and over again too and met with a happy cake face so I am definitely ready to share this with you.

Ingredients

2 large sweet potatoes

1 mug of dates

1 teacup oat flour

1 teacup coconut flour

3 heaped dessert spoons cacao powder

3 large dessert spoons coconut oil (melted)

Approx 30 mls coconut milk

3 dessert spoons date syrup or 100% maple syrup

1 teaspoon GF baking powder

Method

Peel, chop and boil sweet potatoes.

Soak dates in cup for 10 minutes.

Pour potato, dates, coconut oil, cacao powder, date syrup into food processor and blitz until completely smooth.

Tip chocolate potato mix into a bowl and add coconut flour, oat flour and baking powder.

 

Add small amounts of coconut milk until you have a batter like consistency.

Pour into 8/10 baking tray.

Place in preheated oven at 180 degrees.

Bake in oven for 15 minutes.

 

You can make a raw chocolate for the top using the following:

Coconut oil/cacao butter

Cacao powder

Maple syrup

 

I wait until the brownie cools and then pour chocolate on top and place in the freezer for 10-15 mins so the chocolate sets. Add some goji berries on top and then cut into squares.

 

These are best stored in the fridge in an airtight container for up to 5 days.
