Sometimes you don't appreciate what's on your doorstep until you get older... Many of my best childhood memories relate to smokey bonfires, damp sleeping bags, more than merry grown ups dancing to Bruce Springsteen and Runrig, a mist of midges, paddling in freezing cold crystal clear water and getting to stay up really late with my cousins. Growing up in Scotland we had countless adventures camping on the West Coast, Deeside, Perthshire and further afield. We were also fortunate to have annual...

Good morning everyone... As many of you will know (if you follow my Instagram or YouTube channel) I have been getting rid of single use plastic this month. It's part of a global challenge called Plastic Free July. The mission is to build a global movement that dramatically reduces plastic use and improves recycling worldwide. For anyone who's interested to read more, click here to link to the website. I already feel like I've made a lot of progress and learned so much in the past 12 days. Some...

Hello everyone, I hope you've had a great weekend. It's been a weekend of lots of eating for me with a food workshop on Saturday, Father's Day dinner on Sunday and my husband's birthday yesterday. It's been a lovely time with family but I'm looking forward to some healthy eating for the rest of the week now all the celebrations are over! Today I thought I'd share some super simple plant based swaps for anyone who feels overwhelmed by the thought of switching to a plant based diet. There's so...

Happy hump day to you all. It's been a while since my last post and life has been busy but here I am today sharing with you my first experience of cooking with Miso because I think it's pretty awesome stuff!! For those of you wondering what the fudge is Miso, I'm about to share with you why you want to get your hands on some and start using it. For my first recipe I decided to make something pretty simple and opted for a vegetable and noodle soup.

I love running and getting out into the countryside for a long trail run. Part of why I love it is the fresh air and being in nature. I love getting away from street pollution and breathing in fresh air. It feels mighty good!! Last weekend reminded me of the health benefits of fresh air. We spent a couple of nights at my parents who live in the middle of nowhere and took a drive out to visit The Finzean Farm Shop & tea room for which I don't have any pictures but it's fabulous!! We had...

The name Las Vegas was given to the area in the State of Nevada in 1821 by Rafael Rivera, a member of the Antonia Armijo trading party that was traveling to Los Angeles, and stopped for water there on the Old Spanish Trail from New Mexico. Las Vegas means the meadows in Spanish. Urbanisation began in 1902, when a railroad linking Los Angeles with Salt Lake City attracted many farmers to the area, and fresh water was piped into the settlement. In 1911, the city was incorporated as part of Clark...

Something I get asked all the time is whether my husband and son are veggie or vegan. The answer to that in short is 'no'. The second question I get asked is whether that bothers me and the answer to that again is 'no'. Obviously it would be easier if we all ate the same things but I would be very surprised if any family with young children all eat the same things. I would love for my son to enjoy eating more vegetables and share my passion for plant-based living but he is only 5 and I think...

Good evening everyone, Today I am going to be talking about my favourite vegetables, which are THE greens. I love adding greens to my dishes but it has to be quick & easy. I'm going to focus on the greens I use regularly and always have in the fridge/freezer. There are many others, which I eat when I am out and about but they're not necessarily in my fridge every week. These 3 are my favourite and I find them very easy to make tasty and appealing. 1. Spinach 2. Kale 3. Broccoli Below I've...

As it's now Tuesday and I'm thinking about what to make for the rest of this week, I thought I'd share 3 of my 'go-to' week night dinner recipes. These are all plant based and tasty but nutritious dinners that I make on a regular basis. The shepherd's pie is also one that my son will eat (HALLELUJAH). Two of the recipes are from Jamie Oliver and the last one is from Deliciously Ella. I like these because they require some ingredients that overlap and you don't need loads of fancy things to make...

Good evening friends, After another flurry of snow over the weekend and on the back of The Northumberland Endurancelife race in February and Beast from the East, I've decided to blog about running in the snow & other bad weather. It can be very tempting to feel discouraged when the rain, snow or wind starts and everyone around you is headed in doors for the duration. As a beginner I'd have done the same but now I enjoy my running so much, I've become an "all weather runner". I'm not a fan...
